WHAT IS DONDURMA?
Dondurma means ice cream in Turkish, just like what gelato means in Italian. Dondurma is actually more similar to gelato than to ice cream with its low fat content and dense structure. What makes dondurma unique though is its texture. The slightly stretchy, chewy texture helps with savoring the flavors a bit longer as dondurma does not melt in mouth as quickly as other types of ice cream products. And, owing to this texture, dondurma is sometimes served like serving a slice of cake: on a plate with a knife and a fork.
Dondurma is not only known and consumed in Turkey, but is also widely available in the Levant (Eastern Mediterranean countries, including Greece, Syria, Jordan, Lebanon, Cyprus, and Egypt). However, due to different languages spoken in these countries, dondurma is known as 'kaimaki' in Greece and as 'booza' in the Arab world.
